Watermelon, Green onion, and mint Salad


This recipe serves 6


  • 5 cups 3/4 to 1 inch cubes seeded(seedless) watermelon Watermelon, raw
  • 1 cup chopped green onions Onions, green, spring or scallions (includes tops and bulb), raw
  • 3 tbsp chopped fresh mint Peppermint, fresh
  • 3 tbsp chopped Italian parsley
  • 1 1/2 tbsp finely minced seeded deveined jalapeno chilies
  • 1/4 cup olive oil Oil, olive, salad or cooking
  • 2 tbsp Champagne vinegar


Step 1

Combine watermelon, green onions, mint, parsley and chilies in a large bowl. Whisk oil and vinegar together in a small bowl until well blended. Pour over watermelon mixture; toss to coat. Season salad generously with salt and pepper
