Water Chestnut-Pineapple Roll-Ups

Looking for an quick appetizer for your party then look no further as you can’t go wrong with some bacon.  Bacon wrapped around sweet pineapple with a crunch of water chestnut is simple and delicious.  Think Canadian pizza (bacon and pineapple) on a stick.

Ingredients

  • 5 bacon slices
  • 1 can pineapple chunks, drained
  • 1 can water chestnuts, sliced
  • toothpicks

Method

Step 1

Preheat oven to 350°. Cut bacon slices in fourths crosswise; slice water chestnuts in half, and drain canned pineapple chunks.

Step 2

Wrap a bacon piece around a chunk of pineapple and a slice of water chestnut; secure with a toothpick. Place on rack over a shallow pan; bake for about 20 minutes, or until crisp, turning once. Drain on paper towels.

Step 3

May be prepared ahead of time and reheated at 350° for about 5 minutes. Use as an appetizer or garnish.
