Veal And Ham Pate

Ingredients

  • 2 1/2 lbs ground veal
  • 1/2 lb ground pork
  • 2 cloves garlic, minced
  • 1 cup undiluted consomme
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp basil
  • 1 pinch rosemary
  • 1 pinch nutmeg
  • 2 eggs
  • thin strips of salt pork
  • cooked ham, sliced paper-thin
  • 4 tbsp green onions, chopped
  • 4 tbsp parsley, chopped

Method

Step 1

In a large bowl, combine veal, pork, garlic, 1/2 cup of undiluted consomme, salt, pepper, basil, rosemary, nutmeg and eggs.

Step 2

In a small bowl combine green onions and parsley.

Step 3

Line a large casserole with thin strips of salt pork. Add a layer of meat mixture, then a layer of cooked ham and a generous sprinkling of mixed onions and parsley. Repeat layers until casserole is filled ending with the ground mixture at the top.

Step 4

Press down well and add remaining undiluted consomme.

Step 5

Cover with more slices of salt pork and bake covered for 2 1/2 hours at 325º degrees.

Step 6

Remove the cover and weight the pate down while cooling. Re cover and chill well before serving
