Tomato Butter


 This recipe serves 300


  • 10 lbs tomatoes, peeled & chopped Tomatoes, red, ripe, raw, year round average
  • 1 1/2 lb apples, peeled & chopped Apples, raw, with skin
  • 1 quart vinegar Vinegar, white
  • 3 lb brown sugar Sugars, brown
  • 1/8 tsp cayenne Spices, pepper, red or cayenne
  • 1 Tbs cloves,salt,allspice&cinnamon


Step 1

Put spices in a cheesecloth bagPut tomatoes,apples,vinegar&sugar in a stainless steel or enamelled pot.Place spice bag on string in the middle and bring to a boilSimmer over medium heat until consistency of a conservePlace in jars which have been sterilized.Cool and seal with pariffin wax or use Mason Jars and seal immediately
