Tomato Basil Pie


The original was prepared in a pastry shell but I prefer the lighter bread crumb shell.  This recipe serves


  • 2 tbsp melted butter Butter, without salt
  • ¼ cup seasoned bread crumbs Bread crumbs, dry, grated, seasoned
  • 2-3 fresh tomatoes, peeled and sliced
  • 1½ tsp salt ( I used seasoned salt)
  • 1 cup freshly chopped fresh basil Spices, basil, ground
  • ½ lb ricotta cheese Cheese, ricotta, part skim milk
  • 2 large eggs Egg, whole, raw, fresh
  • ¼ lb mozzarella cheese, grated Cheese, mozzarella, part skim milk
  • ½ cup grated parmesan cheese Cheese, parmesan, grated


Step 1

Carefully grease a quiche pan with melted butter. Cover pan with seasoned bread crumbs. Peel and slice 2-3 tomatoes and line crumbs with 1/2 of the slices. Combine next 5 ingredients and cover slices with this mixture. Top with remaining slices. sprinkle with Parmesan cheese and a tablespoon of hebs. Bake 350F until set.
