Sweet Stew


 This recipe serves


  • 1 tbs oil Oil, olive, salad or cooking
  • 1 cup canned tomatoes--- mashed with juice
  • 1 1/2 apple -- diced Apples, raw, with skin
  • 3 tbs tomato paste Tomato products, canned, paste, with salt added
  • 2 tsp brown sugar Sugars, brown
  • 2 tbs currants Currants, zante, dried
  • 4-5 cloves
  • 2-4 lbs stew beef or chuck---cubed
  • 1 large onion----sliced Onions, raw
  • 1/2 tsp cinnamon and cumin
  • 2 bay leaves Spices, bay leaf, crumbled
  • 1/4 lb mild cheddar cheese ---grated Cheese, cheddar
  • 1/2 cup pecans-- coarsely chopped Nuts, pecans


Step 1

Saute onions - 5mins in oil. Do not need to brown meat but you can ;remove onions if you do and do it on a low heat. Mix tomatoes, apple, tomato paste, sugar, currants, cloves, beef cumin and cinnammon together. Simmer 2 hours; covered for 1/2 time. Salt and pepper to taste. After cooked place in oven after you have topped with cheese and nuts. Bake in warm 350f oven until cheese melts and nuts are toasty.
