Sweet Potato Orange Cups

Ingredients

  • 8 oranges Oranges, raw, all commercial varieties
  • 4 cups canned sweet potatoes, drained
  • 1 cup fresh pineapple, diced Pineapple, canned, juice pack, solids and liquids
  • 1 cup orange juice ( from the orange cups) Orange juice, raw
  • 1/4 cup unsalted butter, softened Butter, without salt
  • 1/4 cup brown sugar Sugars, brown
  • 2 large eggs, beaten Egg, whole, raw, fresh
  • 1 Tbs ground cinnamon Spices, cinnamon, ground
  • 1 tsp salt Salt, table
  • TOPPING Cream, whipped, cream topping, pressurized
  • 1 cup pecans, chopped Nuts, pecans
  • 1/2 stick (4tbsp) butter Butter, without salt
  • 1/4 cup brown sugar Sugars, brown
  • 1/4 cup light corn syrup Syrups, corn, light
  • 1/2 tsp salt Salt, table
  • 1/4 cup bourbon Alcoholic beverage, distilled, all (gin, rum, vodka, whiskey) 80 proof
  • 1 tsp vanilla Vanilla extract

Method

Step 1

Toast pecans in a saute pan over medium heat for 2 mins, or until aromatic. Add the next 4 ingredients; cook until syrupy. Off heat, stir in bourbon and vanilla.
