Stuffed tomato Salad Three meals a day

Ingredients

  • 6 whole tomatoes Tomatoes, red, ripe, raw, year round average
  • 1 cup chicken,tenderloin,veal,crabmeat,shrimp,beef or ham, diced small
  • 1/2 cup celery, diced Celery, raw
  • 1/4 cup chopped nuts ( almonds,pecans ,pinenuts,macadamia nuts), the choice depends on meat used
  • 2 Tbs green pepper, chopped Peppers, sweet, green, raw
  • 1/4 cup mayonnaise or your choice of dressing
  • seasonings to taste

Method

Step 1

Remove skin from tomatoes. From the stem end remove the top and clean out the centre of tomatoes. Sprinkle with salt. Invert on plate and let stand.

Step 2

Toss other ingredients lightly together with a fork. Pile into cavity of the tomato and arrange on lettuce leavesGarnish
