Spinach Salad with Nectarines and Spicy Pecans

This recipe has many variations. Use almonds or walnuts for pecans, bacon or ham for prosciutto. Substitute your choice of greens if you want. This is an excellent blend of flavours for a salad.  This recipe serves 12

Ingredients

  • PECANS
  • 1/4 cup powdered sugar Sugars, powdered
  • 1/2 tsp salt Salt, table
  • 1/4 tsp ground allspice Spices, allspice, ground
  • 1/8 tsp ground nutmeg Spices, nutmeg, ground
  • 1/8 tsp ground red pepper Spices, pepper, red or cayenne
  • 1/3 cup pecans ( I use 1/2 cup)
  • VINAIGRETTE
  • 3 Tbs finely chopped shallots Shallots, raw
  • 3 Tbs balsamic vinegar Vinegar, balsamic
  • 1 tsp sugar Sugars, granulated
  • 2 tsp fresh lemon juice Lemon juice, raw
  • 2 tsp extra virgin olive oil Oil, olive, salad or cooking
  • 1 tsp Dijon mustard Mustard, Dijon
  • 3/4 tsp salt Salt, table
  • 1/2 tsp freshly ground black pepper Spices, pepper, black
  • SALAD Oil, olive, salad or cooking
  • 3/4 cup very thinly sliced prosciutto coarsely chopped about 2 oz Pork, cured ham, prosciutto
  • 2 6 oz pkgs fresh baby spinach ( 12 cups)
  • 2 large ripe nectarines, cut into 1/4" wedges ( about 3/4 lb) Nectarines, raw

Method

Step 1

To prepare salad, heat a large nonstick skillet coated with cooking spray over medium -high heat. Add proscuitto and saute for 5 mins or until crisp, finely chop. Combine spinach, nectarines and dressing in a large bowl; toss gently to coat.
