Spiced Vegetable Couscous


 This recipe serves 4


  • 1/2 cup canned chickpeas, rinsed Chickpeas (garbanzo beans, bengal gram), mature seeds, canned
  • 1/2 cup finely chopped carrots Carrots, raw
  • 1/2 cup finely chopped zucchinis
  • 1/2 cup chopped green onions Onions, green, spring or scallions (includes tops and bulb), raw
  • 2 tbsp olive oil Oil, olive, salad or cooking
  • 1 1/2 cup chicken stock or water
  • 2 tbsp chopped parsley Parsley, raw
  • 1 tsp paprika Spices, paprika
  • 1/4 tsp chili flakes Spices, chili powder
  • salt to taste Salt, table
  • 1 cup couscous Couscous, cooked
  • 1/2 cup raisins Raisins, seedless


Step 1

Combine first 4 ingredients in olive oil in a pot. Add stock parsley, paprika, chili flakes, salt to taste. Bring to a boil and sprinkle in the couscous. Stir around, add raisins, cover and remove from heat. let sit 5 mins, uncover and stir again. Serve.
