Smoked Salmon And Mozzarella Rounds2013-06-20

An unusual hot smoked salmon mouthful
- 8 slices bread
- 4 oz butter, softened
- 1 clove garlic, crushed
- 1/2 tsp french mustard
- 1 Tbs chopped parsley
- 2 tsp capers, chopped
- 4 slices mozzarella cheese
- 4 slices smoked salmon
Cut 2-inch circles from bread.
Melt half the butter in a pan, brush both sides of circles with butter and place on oven tray. Bake in moderate oven 10 minutes or until golden brown. remove and cool.
Place remaining soft butter in a bowl; add crushed garlic, mustard, parsley and chopped capers; mix well. Spread butter over one side of bread circles.
Cut 1-inch circles of smoked salmon and place on buttered side of each circle.
Cut 1-inch circles of cheese and place on top of smoked salmon.
Arrange circles on baking tray; bake in moderate oven 10 minutes or until cheese melts.
