Shrimp Stuffed with Crab

Ingredients
- 32 Jumbo Shrimp
- 1 lb lump crab
- 1 large egg Egg, whole, raw, fresh
- 1 Tbs Dijon mustard Mustard, Dijon
- 3 Tbs good quality mayonnaise
- 1/2 cup saltine cracker crumbs
- Chardonnay Tarragon Sauce
- 3/4 cup white wine (Chardonnay)
- 1 medium shallot sauteed in 1 Tbsp butter
- 1/2 cup chicken broth Soup, chicken broth, canned, prepared with equal volume water, commercial
- 4 oz Brie cheese, cubed Cheese, brie
- 2 Tbs heavy cream Cream, fluid, heavy whipping
- 2 Tbs fresh tarragon Tarragon, fresh
Method
Step 1
Clean and butterfly shrimp. Mix crab, egg, mustard, mayo, and cracker crumbs. Arrange shrimps in (4's) . Pinwheel fashion. Top with a crab cake, then sprinkle with buttered bread crumbs. Bake 10 mins at 350F then broil for 5 minutes.
Step 2
Saute shallots until tender but not brown. add wine and reduce by 1/2. Add broth and brie; then melt slowly on low heat, add cream.
