Shrimp-Stuffed Cucumbers

Very different flavours to old standards
Ingredients
- 2 medium cucumber, peeled, cut crosswise into 3/4 inch pieces
- 1/2 cup finely chopped onions
- 1 Tbs cooking oil
- 2 Tbs snipped fresh mint leaves
- 2 Tbs lime juice
- 1 tsp fish sauce
- 1 tsp sugar
- 8 oz cooked shrimp, finely chopped
- 1/8 tsp chili oil
- mint leaves
- lemon slices
Method
Step 1
Scoop seeds form cucumber pieces. Turn cut side down, onto a paper towel to drain. In a small skillet cook onion in cooking oil till tender
Step 2
Stir together the 2 tablespoons snipped mint leaves, lime juice, fish sauce, and sugar in a medium bowl. Stir in shrimp, onion mixture, and chili oil.
Step 3
Fill centers of cucumber pieces with shrimp mixture. Arrange on a serving dish. Garnish with mint leaves and lemon slices.
