Shrimp-Cucumber Spread

Healthy and tasty on a hot summers day
Ingredients
- 1/2 8oz package light cream cheese, softened
- 1 Tbs low calorie low sodium catsup
- 1 tsp brown mustard
- dash garlic powder
- 1/2 8 oz package frozen, peeled cooked shrimp, chopped
- 1/4 cup finely chopped seeded cucumber
- 1 Tbs finely chopped onion
- 30 medium to large Belgian endive, separated into leaves
- 1 lb seedless grapes, separated into clusters
Method
Step 1
Stir together the cream cheese, catsup, brown or prepared mustard, and garlic powder in a medium mixing bowl. Stir in the shrimp, cucumber, and onion. Cover and chill Separate the endive leaves. wash and dry carefully. Spoon mixture into leaves and place on platter. Garnish with red grapes
Step 2
You can use crabmeat.
