Shrimp Cooked In Beer

The first step make these taste way above the normal cooked shrimp. The second moves it up another notch. Beer, shrimp and the super bowl. Why not!
Ingredients
- 2 lbs large fresh shrimp
- 1 large bunch celery leaves
- 2 large sprigs parsley
- 2 small slices onion
- 1/2 tsp dried leaf thyme
- 1 pinch tarragon
- 2 leaves bay leaf
- 6 peppercorn
- 2 whole cloves
- 2 bottles beer (12 OZ each)
- 1/4 lb blue cheese, at room temperature
- 125 g cream cheese, at room temperature
- 1 tsp finely minced onion
- 1 tsp prepared mustard (Dijon)
- 1/4 tsp dried leaf savory
- 1 tsp prepared horseradish
- 1 cup parsley, finely chopped
Method
Step 1
Wash shrimp and put in a large saucepan. Add next 9 ingredients and bring to boil. Reduce heat and simmer until shrimp are a bright pink about 5 minutes. Drain and Cool. Shell shrimp and remove back veins. Slit the backs almost through then chill.
Step 2
Combine remaining ingredients except parsley blending well. Stuff as much as possible into the slit en each shrimp. Dip cheese side of shrimp in parsley to decorate then chill
