Shrimp Biscuits

Searching for another biscuit appetizer option? These are similar to to a sausage biscuit but a wonderful change.
Ingredients
- 2 cups buttermilk baking mix
- 2/3 cup milk
- 2 tsp dillweed
- 1/4 cup butter
- 2 green onions, chopped
- 2 tsp grated lemon peel
- 1 4 1/2oz can tiny shrimp, drained
Method
Step 1
Preheat oven to very hot 450F.
Step 2
Combine baking mix, milk, and dillweed in a medium-sized bowl. Mix until soft dough forms; beat vigorously for 30 seconds.
Step 3
Turn dough out onto clean surface lightly dusted with baking mix. Shape dough into ball; knead 10 times.
Step 4
Roll dough out into a 7X6 1/2-inch rectangle. Cut into 20 squares. Place on ungreased cookie sheet, 1 inch apart.
Step 5
Bake in preheated oven for 12 minutes or until golden brown. Remove to wire rack and cool.
Step 6
Combine butter, green onions and lemon rind in a small bowl; blend well. Split biscuits in half horizontally. Spread each half with small amount of seasoned butter, top with 2 or 3 shrimp. Dot shrimp with small amount of seasoned butter; place on ungreased cookie sheet.
Step 7
Bake in preheated 325F oven for 5 minutes or until heated through. Arrange on serving platter. Garnish with fresh dill.
