Senate Bean Soup

This comes close to reproducing the famous US Senate Bean Soup  This recipe serves

Ingredients

  • small piece ham , ham bone, or 1/8 pound ofsalt pork
  • 4 cups boiling water Water, municipal
  • 1 20 oz can navy beans, drained
  • 1/2 whole bay leaf Spices, bay leaf, crumbled
  • 3 peppercorns Spices, pepper, black
  • 3 whole cloves Spices, cloves, whole
  • 1 whole carrot, diced Carrots, raw
  • 3 ribs celery with leaves, chopped
  • 1/2 onion, sliced Onions, raw
  • 1 clove garlic, minced Garlic, raw
  • 1/8 tsp saffron (optional) Spices, saffron
  • 1/2 cup mashed potatoes, freshly cooked Potatoes, mashed, dehydrated, prepared from granules with milk, water and margarine added
  • 1/2 cup chopped sorrel

Method

Step 1

In large soup pot add meat, water, bay leaf, peppercorns, cloves, carrot, celery, onion, garlic,

Step 2

Cook soup slowly for about 30 minutes.

Step 3

Pour into a sieve in order to remove the bay leaf, peppercorns and cloves. Remove meat and chop.

Step 4

Place remaining ingredients and half the beans together with liquid into a foodmill or blender and blend smooth. Add water or milk as required to thin to desired consistancy. Add meat and remaining beans

Step 5

Season to taste and garnish with croutons and chopped chives or celery
