Seafoam Chews


A holiday favourite of the family. Kids love them.  This recipe serves


  • 2 cups flour Wheat flour, white, all-purpose, enriched, unbleached
  • 2 tsp baking powder Leavening agents, baking powder, double-acting, sodium aluminum sulfate
  • 1 tsp baking soda Leavening agents, baking soda
  • 1/2 tsp salt Salt, table
  • 1 Tbs vanilla Vanilla extract
  • 1/2 cup shortening Shortening, household, lard and vegetable oil
  • 1/4 cup white sugar Sugars, granulated
  • 1/2 cup brown sugar Sugars, brown
  • 2 large eggs --- separated Egg, whole, raw, fresh
  • 3 Tbs milk Milk, reduced fat, fluid, 2% milkfat, with added vitamin A
  • 3/4 6 oz pkg chocolate chips Chocolate chips, semisweet
  • the whites from the yolks
  • 1 cup brown sugar Sugars, brown
  • 1/2 cup chopped nuts Nuts, almonds, dry roasted, without salt added


Step 1

Combine the first 10 ingredients and press this dry crumble firmly into an 8x10 pan. Bake at 375F for 10 mins Remove and sprinkle with the chocolate chips. Press in lightly. Beat egg whites until stiff. Add second batch of brown sugar. Spread onto the chocolate chips and sprinkle with chopped nuts. Bake at 375F for another 15 mins. Cool and cut into squares
