Quick and tasty microwave appetizer
Ingredients
- 4 oz cream cheese, low fat
- 1 6oz package frozen crabmeat or shrimp, thawed and drained
- 2 Tbs fresh lemon juice
- 1 Tbs ranch-style dry salad dressing mix
- 1 Tbs mayonnaise, low fat
- 2 medium zucchini, thinly sliced
- paprika
Method
Step 1
Heat cheese in 1 quart bowl on high, in the microwave, for 30 seconds to 1 minute to soften. Add crab, lemon juice, dressing mix and mayonnaise and blend well.
Step 2
Arrange zucchini slices in serving dish. Top each slice with a teaspoon of crab mixture. Sprinkle with paprika
Step 3
In a microwave cook on high until zucchini is crisp-tender, about 1-2 minutes. Let cool slightly. Chill before serving
