Roasted Brussel Sprouts


 This recipe serves


  • 1 1/2 lbs brussel sprouts, halved Brussels sprouts, cooked, boiled, drained, with salt
  • 1/4 cup olive oil Oil, olive, salad or cooking
  • salt and pepper Peppers, sweet, red, cooked, boiled, drained, with salt
  • 1/4 lb proscuitto, sliced in thin strips
  • juice of one lemon Lemon juice, raw


Step 1

Heat oven to 400F Trim and halve brussel sprouts. Toss with olive oil, salt and pepper. Place sprouts in a single layer on a baking sheet; roast 15 mins. Thinly slice proscuitto. Heat 1 T. olive oil in skillet over medium heat. Add proscuitto and fry until crisp and drain on paper towels. Off heat, lemon juice into skillet, scraping up bits from bottom. Toss pan juices with brussel sprouts, garnish with the proscuitto strips, and serve
