Roasted Asparagus with Shallots and Sesame Seeds

Ingredients
- 2 1/2 lbs medium asparagus, trimmed Asparagus, raw
- 1 1/2 Tbs olive oil Oil, olive, salad or cooking
- 2 1/2 Tbs minced shallots Shallots, raw
- 2 1/2 Tbs sesame seeds, lightly toasted Seeds, sesame seeds, whole, dried
- 1/4 tsp salt Salt, table
- 1/8 tsp cayenne pepper Spices, pepper, red or cayenne
- lemon juice Lemon juice, raw
Method
Step 1
Put a rack in middle of oven and preheat oven to 500 degrees F. Toss asparagus with oil on a large baking sheet with sides, then spread out in one layer. Roast, shaking pan every 2 minutes, intil barely tender, 6 to 8 minutes. Mix shallots with cayenne. Sprinkle asparagus with shallots and sesame seeds and roast until asparagus is crisp-tender, about 1 minute more. Sprinkle with salt and lemon juice
