Rhubarb Brunch Cake

Great Brunch Treat with rhubarb! Cake stays on top and rhubarb abd custard are on the bottom  This recipe serves

Ingredients

  • 1 box yellow cake mix
  • 1 cup water Water, municipal
  • 1/3 cup oil Oil, olive, salad or cooking
  • 3 large eggs Egg, whole, raw, fresh
  • 4 cups sliced rhubarb Rhubarb, raw
  • 1 cup white sugar Sugars, granulated
  • 2 cups whipping cream, unwhipped

Method

Step 1

Grease and flour 9 x 13 pan. In bowl,combine the cake mix, water, oil, and eggs. Mix and pour into the pan. Sprinkle rhubarb and sugar on top. Pour whipping cream over all. Bake 1 hour at 350F or until the cake tests as done. Serve warm and refrigerate leftovers
