Rhubarb and Pineapple Cocktail


A true Three Meals a Day Classic from the book – Refreshing on hot day!


  • 4 cups diced rhubarb
  • 1 1/2 cups water
  • 3/4 cup granulated sugar
  • 1 1/2 cups pineapple juice


Step 1

Cut up rhubarb without peeling; add water and simmer until quite tender. Press through a sieve and reheat to disolve the sugar.

Step 2

Chill and add pineapple juice and the food colouring. Serve ice cold with small canapes.
