Quick Chicken Pate

This looks like a baked pate but is quicker
Ingredients
- 2 cups chopped cooked chicken breast
- 1/2 cup sliced celery
- 2 Tbs dry sherry
- 2 Tbs mayonnaise
- 1 tsp lemon juice
- 3 sprigs parsley
- 1/4 tsp salt
- 1/4 tsp ground nutmeg
- 1/2 cup toasted almonds, finely chopped
- crackers or party rye bread
Method
Step 1
Combine chicken, celery, sherry, mayonnaise, lemon juice, parsley, salt, nutmeg, and dash of pepper. Process the mixture, half at a time in a blender container till nearly smooth or all at once in a food processor
Step 2
Shape mixture into a ball. Cover and chill. At serving time, shape and roll in the toasted almonds. Serve with crackers
