Potato Spinach Pie

Ingredients

  • 2 Tbs vegetable oil Vegetable oil, canola
  • 1 1/2 cups frozen hash brown potatoes Potatoes, hashed brown, frozen, plain, unprepared
  • 1/4 cup chopped onions Onions, raw
  • 4 cups baby spinach leaves or 1PK frozen Babyfood, vegetables, spinach, creamed, strained
  • 1/2 tsp salt Salt, table
  • 1/4 tsp pepper Spices, pepper, black
  • 3 large eggs Egg, whole, raw, fresh
  • 2 cups shredded cheddar cheese Cheese, cheddar

Method

Step 1

Use 1 9 inch deep dish pie shell1. Prepare pie crust according to directions ie partially baked prior to filling2. In a large skillet heat oil over medium high and cook potatoes and onions 5 minutes or until brown, stirring occasionally.3. Add spinach. If using frozen then dethaw and squeeze out most water beforehand and stir in. If using fresh then reduce heat to low and cook for 3 minutes or until spinach wilted. Remove from heat , add salt and pepper and stir well.4. In a large bowl whisk eggs until blended. Stir in milk, spinach mixture and 1 1/2 cups of cheese. Pour into pie shell.5. Bake at 375 F/190C for 35-40 minutes or until set.6. Remove from oven, sprinkle with remaining cheese. Let stand 5 minutes before serving.
