Pork Tenderloin A La Dean


 This recipe serves 6


  • 2 1 pound pork tenderloin, whole Pork, fresh, loin, tenderloin, separable lean and fat, cooked, broiled
  • 1 Tbs butter Butter, without salt
  • 2 Tbs oil Oil, olive, salad or cooking
  • fresh basil Basil, fresh
  • 1/2 cup melted butter Butter, without salt
  • 2/3 cup red currant, cranberry sauce, or lingonberries (best)
  • 1 cup cream Cream, fluid, heavy whipping
  • 1 Tbs flour Wheat flour, white, all-purpose, enriched, unbleached


Step 1

In pan, brown tenderloin (whole), over medium heat in oil and butter. Transfer to shallow pan and sprinkle with basil (generously). Then pour some sauce over the meat. Bake at 325F uncovered for 50-60 minutes, basting often. Remove tenderloin to hot dish and keep warm. Mix 1 cup cream and 1 tablespoon flour. Stir into pan juices. Slice meat and pour some sauce over meat. Serve remaining sauce separately.
