Plum Glazed Medallions of Grilled Pork Tenderloin


 This recipe serves


  • 2 1-lb pork tenderloins --brined
  • pepper Spices, pepper, black
  • BRINE Corn, sweet, yellow, canned, brine pack, regular pack, solids and liquids
  • 1/2 cup kosher salt Salt, kosher
  • 1/2 cup sugar Sugars, granulated
  • 1 quart cool water


Step 1

In a medium bowl, mix salt and sugar with water until dissolved. Trim tenderloins of any excess fat and silverskin then submerge them in the brine; let stand about 45 mins. Remove the pork from the brine, rinse thoroughly and pat dry.
