Peach Rum Lemonade

This recipe was adapted from a recipe in the Miami Herald that was a virgin drink variety. The original drink recipe can be found here. A great recipe for your summer backyard bbq during peach season. This recipe requires chill time so make it in advance.
Ingredients
- 2 cups coarsely chopped peaches plus 1 pitted peach cut into 8 wedges for garnish
- 1/2 cup sugar
- 1 cup lemon juice (6 lemons)
- 4 cups ice
- 1 cup rum
- 3 cups water
Method
Step 1
Combine 3 cups water, chopped peaches and sugar in a medium saucepan over medium-high heat. Bring to a boil, reduce heat and simmer 3 minutes.
Step 2
Place mixture in a blender and let stand 20 minutes to cool. Add 1 cup of rum and place the lid on blender, removing center piece to let steam escape. Place a clean towel over blender lid to avoid splatters, and blend until smooth. Refrigerate at least 3 hours.
Step 3
Press peach mixture through a sieve, reserving liquid and discarding solids. Stir in lemon juice. Place 1/2 cup ice in each of 8 glasses.
