Pea Pods with Cashews


Intresting but light side vegetable for a heavy or light meal  This recipe serves 6


  • 1 lb snow peas Peas, edible-podded, raw (snow peas)
  • 1 tsp + 1tbsp vegetable oil --- divided
  • 1/2 cup coarsely chopped cashews Nuts, cashew nuts, dry roasted, without salt added
  • salt and pepper Peppers, sweet, red, cooked, boiled, drained, with salt


Step 1

Wash pea pods, trim ends and pulloff strings. Blanch in a pot of boiling water for 1 min; drain. Dryon paper towels. (Pea pods maybe refrigerated overnight ) In medium skilletor wok, heat 1 tsp oil.Saute nuts over high heat, stirring constantly, until golden; remove to a small bowl. before seving, heat 1 tbsp oil in same skillet or wok; saute pea pods until hot. Stir in cashews. Season to taste with seasoned salt and pepper
