Pasta e Fagioli 2


This is an excellent recipe. Involves time but worth it  This recipe serves


  • 1 lb sweet Italian sausage Sausage, Italian, sweet, links
  • 1/4 lb pancetta, chopped
  • 1 lb ground beef Beef, ground, lean, (approximately 21% fat), raw
  • 3 onions, finely chopped Onions, raw
  • 2 stalks celery, diced Celery, raw
  • 3 cloves garlic, chopped very finely Garlic, raw
  • 4 cups chicken stock Soup, chicken broth, canned, prepared with equal volume water, commercial
  • 8 oz tomato sauce Tomato products, canned, sauce
  • 2 19 oz cans cannellini beans, well drained, divided Beans, kidney, white (cannellini)
  • 1 15oz can red kidney beans, well drained Beans, kidney, red, mature seeds, canned
  • 1 14oz can tomatoes , seeded,chopped, liquid drained Tomatoes, red, ripe, raw, year round average
  • 1/2 tsp white pepper Spices, pepper, white
  • 1 1/2 tsp dried ground thyme Spices, thyme, ground
  • 1 tsp dried rosemary Rosemary, fresh
  • 1 tsp dried basil Spices, basil, ground
  • 1 1/2 cups ditalini or other tubular pasta
  • 1 cup cooked orzo Pasta, orzo
  • 1 carrot, shredded Carrots, raw
  • parmigiano, to garnish
  • chopped basil, to garnish Spices, basil, ground


Step 1

Place a large heavy soup pot, over medium heat. Cook sausage links with a small amount of water, covered, until the sausage has browned, about 10 mins

Step 2

Remove sausages to a plate and let cool. Once cooled chop into pieces and then use a food processor to finely grind the sausage pieces. Brown the pancetta in the same pot as used for the sausage links, using a little olive oil if necessary. When browned,not crisp add back to pot the chopped sausages and ground beef,and cook until both have browned, about 15 mins.

Step 3

Next add onions, celery and garlic; cook 5 mins.,stirring constantly. Add the stock and skim to remove excess fat. Continue to cook at a simmer for 15 mins.

Step 4

In food processor, blend tomato sauce with 1 cup cannellini beans until smooth. Pour the mixture into the pot then add remaining beans, tomatoes and herbs. After 5 mins add the pasta and simmer for 20 mins

Step 5

Add orzo and carrots and simmer for an additional10 mins. Add more or less water or stock to obtain desired consistency

Step 6

Serve with grated parmigiano and chopped basil
