Oven Baked or BBQ flank Steak Rouladen

I made this up one summer weekend when company arrive as a surprise. It was hot and we used the BBQ but it could easily be done in the oven in the cooler weather This recipe serves
Ingredients
- 2 whole flank steaks slightly pounded
- ¼ cup Dijon mustard Mustard, Dijon
- 1 cup sliced onions divided Onions, raw
- 4 medium dill pickles
- 6 slices bacon Pork, cured, bacon, raw
- 1 cup chopped carrots Carrots, raw
- 1/2 cup chopped onions Onions, raw
- 2 cups beef broth Soup, beef broth or bouillon canned, ready-to-serve
Method
Step 1
Take one of the steaks with 1/2 of the mustard ; top with 1/2 of the sliced onions, then the sliced dill; bacon strips and then the other half of the sliced onions. Spread the second steak with the rest of the mustard and place mustard side down on the piled onions etc. Tie several times around the steaks both widthwise and lengthwise. Place in a greased cast iron skillet and brown on each side. Mix chopped vegetables in a bowl. When the steak is browned lift it out and place the vegetables in skillet. Top with the steak, add some of the broth. Cover with foil. Bake 1 hour in a closed BBQ or oven at 350F. Add broth as needed. when done remove meat to a heated platter and make a sauce out of the drippings. Thicken to taste with a water and cornstarch mixture. Remove strings and slice diagonally. Top with sauce.
