Onion Wine Soup


 This recipe serves 8


  • 1/4 cup butter Butter, without salt
  • 5 large onion, chopped Onions, raw
  • 5 cups beef broth Soup, beef broth or bouillon canned, ready-to-serve
  • 1/2 cup celery leaves, chopped Celery, raw
  • 1 large potato, SLICED Potatoes, raw, flesh and skin
  • 1 cup dry white wine Alcoholic beverage, wine, table, white
  • 1 Tbs vinegar Vinegar, white
  • 2 tsp sugar Sugars, granulated
  • 1 cup light cream Cream, fluid, light (coffee cream or table cream)
  • 1 Tbs parsley sprig, minced Parsley, raw
  • salt and pepper Peppers, sweet, red, cooked, boiled, drained, with salt


Step 1

Melt butter in large saucepan. Add chopped onion and mix well. Add beef broth, celery leaves,and potato. Bring to boil: cover and simmerfor 30 mins.

Step 2

Puree in blender in small batches so it does not explode the top. Return to saucepan and blend in wine, vinegar, and sugar. Bring to boil and simmer 5 mins. Stir in cream, parsley, salt and pepper.

Step 3

Heat thoroughly but DO NOT BOIL
