Mixed Vegetables with Parsley & Pine Nuts


 This recipe serves 4


  • 1 1/2 lbs broccoli, in flowerlets
  • 2 cups carrots--(5), thin diagonal slices Carrots, raw
  • 2 cups red peppers---3, thin strips Peppers, sweet, red, cooked, boiled, drained, with salt
  • 2 Tbs butter Butter, without salt
  • 1/4 cup fresh parsley, minced Parsley, raw
  • 4 Tbs pine nuts, toasted slightly Nuts, pine nuts, pignolia, dried


Step 1

In boiling water cook broccoli(cauliflower) & carrots for 4 mins til tender crisp. Drain and chill quickly. Dry on towelling. In skillet or wok cook peppers in butter, 3-5 mins. Add remaining ingredients Add more butter if neccessarySalt &pepper to tasteHeat thoroughly and seve immediately
