Mint Sorbet


 This recipe serves 6


  • 1 1/4 cups water Water, municipal
  • 3 oz sugar Sugars, granulated
  • 16 sprigs mint
  • juice of one lemon Lemon juice, raw


Step 1

Bring water and sugar to a boil. Roughly chop 5 of the mint leaves and add them to the sugar syrup. Lower the heat and simmer gently for 5 mins. Remove from the heat and allow to cool. Place in liquidiser (blender) and process until well infused. Pass through a medium sieve into a clean bowl, and mix in the lemon juice. Chop 5 mint sprigs and add. Place in a freezerproof bowl or an ice cream maker and freeze. Serve chilled and garnish with mint leaves.
