This Mexican Salad with a lime guacamole dressing was served with grated cheddar and monterey jack cheeses and tortilla strips. It was served as part of the Seven Deadly Sins Dinner Party.
Ingredients
- ½ can black beans
- ½ can corn kernels
- 16 cherry tomatoes, quartered
- 2 green onions, sliced
- 1/3 cup fresh cilantro leaves, whole without stalks
- ½ cup grated cheddar and Monterey Jack cheeses
- ½ cup ranch flavoured tortilla strips
- ¼ cup guacamole
- 2 tsp. lime juice
- ¼ cup olive oil
- ¼ tsp. garlic powder
- 1 tsp. honey
- ½ tsp. salt
- ½ tsp. chili powder
Method
Step 1
Blend guacamole, lime juice, olive oil, garlic powder, honey, salt and chili powder in a mini food processor to create the dressing. In a salad bowl, mix black beans, corn, tomatoes and onions. Top with dressing and mix well. Let sit for an hour before serving. Divide between 4 plates and top with grated cheese and tortilla strips.
