Mesclen Lettuce with Stilton Cheese, Toasted Pecans, and Caramelized Pears

Ingredients
- 3 Tbs butter Butter, without salt
- 2 Tbs sugar Sugars, granulated
- 2 pears, peeled and large diced Pears, raw
- 3 cloves roasted garlic, mashed
- 1 Tbs balsamic vinegar Vinegar, balsamic
- 1 tsp salt Salt, table
- 1 tsp pepper Spices, pepper, black
- 1/4 cup olive oil, extra virgin
- 1/2 cup stilton cheese, crumbled
- 8 cups mesclen
- 3/4 cup pecan halves Nuts, pecans
- 1 cup cream cheese ( for presentation)
Method
Step 1
In a large saute pan, over medium heat, add the butter and the sugar. Add the diced pears and cook until well caramilized, approximately 8 mins. In a small bowl, whisk together the garlic, vinegar, salt, pepper and olive oil. Fold stilton gently into the dressing. Arrange mesclen on plates, spoon dressing stilton mix over mesclen, then the caramelized pears and then the toasted pecan. Stir gently then add a sprig of watercress or other herb which has been placed in a small dollip of cream cheese, placing this in the centre.
