Mango Salad

Ingredients

  • 4 cups chopped mango (about 3 medium) or 4 cups chopped refrigerated mango slices, drained maybe substitute
  • 2 chopped tomatoes Tomatoes, red, ripe, raw, year round average
  • 1/2 red onion chopped Onions, red
  • 2 cucumbers seeded and chopped
  • 2 cups frozen corn kernels, cooked Corn, sweet, yellow, frozen, kernels, cut off cob, boiled, drained, with salt
  • 1/2 cup shredded fresh basil Spices, basil, ground
  • 1/2 cup olive oil Oil, olive, salad or cooking
  • 1/4 cup rice vinegar Vinegar, rice wine
  • 1 Tbs fresh lime juice Lime juice, raw
  • 2 cloves garlic minced Garlic, raw
  • 1/2 tsp salt Salt, table
  • 1/2 tsp pepper Spices, pepper, black
  • 1 bunch watercress, torn Watercress, raw
  • 2 heads Bibb or boston lettuce, torn Lettuce, butterhead (includes boston and bibb types), raw

Method

Step 1

Combine first 13 ingredients in a large bowl, tossing to coat. Coat mixture, and chill 2 hours. Serve over watercress and lettuce
