Mango Salad

Ingredients
- 4 cups chopped mango (about 3 medium) or 4 cups chopped refrigerated mango slices, drained maybe substitute
- 2 chopped tomatoes Tomatoes, red, ripe, raw, year round average
- 1/2 red onion chopped Onions, red
- 2 cucumbers seeded and chopped
- 2 cups frozen corn kernels, cooked Corn, sweet, yellow, frozen, kernels, cut off cob, boiled, drained, with salt
- 1/2 cup shredded fresh basil Spices, basil, ground
- 1/2 cup olive oil Oil, olive, salad or cooking
- 1/4 cup rice vinegar Vinegar, rice wine
- 1 Tbs fresh lime juice Lime juice, raw
- 2 cloves garlic minced Garlic, raw
- 1/2 tsp salt Salt, table
- 1/2 tsp pepper Spices, pepper, black
- 1 bunch watercress, torn Watercress, raw
- 2 heads Bibb or boston lettuce, torn Lettuce, butterhead (includes boston and bibb types), raw
Method
Step 1
Combine first 13 ingredients in a large bowl, tossing to coat. Coat mixture, and chill 2 hours. Serve over watercress and lettuce
