Lemon Sugar Wafers


 This recipe serves


  • 2 cups sugar Sugars, granulated
  • 1 cup butter Butter, without salt
  • 2 eggs Egg, whole, raw, fresh
  • 1/4 cup lemon juice Lemon juice, raw
  • 1 tbsp grated lemon peel Lemon peel, raw
  • 1 tsp vanilla Vanilla extract
  • 3 1/2 cups cake and pastry flour
  • 1 tsp baking soda Leavening agents, baking soda
  • 1 tsp salt Salt, table
  • 1 tsp cream of tartar Leavening agents, cream of tartar
  • granulated sugar Sugars, granulated


Step 1

In a large bowl cream sugar,eggs, butter, juice, peel until smooth. Stir in flour, baking soda,salt and cream of tartar until well blended. Chill 1 hour. Shape dough into 1" balls; roll in sugar . Place 2 inches apart on greased baking sheets. Bake at 325F for 15-20 mins until light golden brown. Cookies will be soft in the centre. Cool 2 minutes then remove to a wire rack Cool completely.
