Lemon Chicken


I first had this recipe at a cocktail party. The hostess had slivered the chicken so one could eat it with a fork off a small plate.  This recipe serves


  • 6 boneless,, skinless chicken breasts Chicken, broilers or fryers, breast, meat only, raw
  • 3 tbsp flour Wheat flour, white, all-purpose, enriched, unbleached
  • 3 tbsp olive oil Oil, olive, salad or cooking
  • ¼ cup butter, not margarine
  • 1/3 cup soy sauce Soy sauce made from soy and wheat (shoyu), low sodium
  • 2 tbsp brown sugar Sugars, brown
  • 3 tbsp fresh lemon juice Lemon juice, raw
  • 1 tsp crushed garlic Garlic, raw
  • ½ tsp white sugar Sugars, granulated


Step 1

Roll breasts in flour to coat. Melt oil and butter on medium high heat. Brown 5-7 minutes until chicken is light golden. Remove chicken breasts. Add sauce ingredients to same pan. Deglaze pan as stirring, Return chicken to pan. Spoon sauce over chicken. Simmer, spooning sauce over top for 3 minutes until tender and cook through.
