Lemon Berry Trifle


Light very easy summer recipe that is low in fat but taste great  This recipe serves 6


  • 5 cups angel food cake cubes
  • 1 8oz carton lemon fat free yoghurt
  • 2 oz frozen light whipped dessert topping, thawed
  • 3 cups mixed berries (raspberries,blueberries,blackberries and strawberries make a good mix, fresh is best but thawed frozen ones work as well
  • sprig mint, garnish Peppermint, fresh


Step 1

Place angel food cake cubes in a 2 1/2 quart clear glass bowl. Stir together the yoghurt and whipped topping in a small bowl. Spoon yoghurt mixture over cake cubes. (I toss lightly) Sprinkle with berries. Garnish with mint sprigs
