- 1-4 lamb tenderloins---cut into medallions
- ½ to 1 cup almonds or hazelnuts---- toasted and ground
- 1-2 cup hollandaise sauce Sauce, hollandaise, with butter fat, dehydrated, dry
- Butter for frying
Prepare hollandaise sauce. Toast nuts to golden and grind them. Brown medallions in butter and keep warm. Serve medallions topped with hollandaise which has been infused with the ground nuts.
