Italian Wedding Soup

I used this for a murder mystery dinner with and Italian theme. I was told by two people who are married to Italians that is the best they had ever had. I got it off the internet and only changed a few things  This recipe serves 8

Ingredients

  • 1 bag spinach, cleaned and chopped Spinach, raw
  • 8 cups chicken broth Soup, chicken broth, canned, prepared with equal volume water, commercial
  • 1 lb ground beef Beef, ground, lean, (approximately 21% fat), raw
  • 4 eggs, divided Egg, whole, raw, fresh
  • 1 cup dry bread crumbs Bread crumbs, dry, grated, plain
  • 6 Tbs Fresh Basil, chopped Spices, basil, ground
  • 3 tsp fresh parsley, chopped Parsley, raw
  • 1 1/2 cups fresh grated parmesan Cheese Cheese, parmesan, grated

Method

Step 1

In separate pot over medium heat, bring the broth to a boil. In a the broth to a boil. In a large bowl, combine beef, 1 egg,breadcrumbs, basil, parsley, and 1/2 cup Parmesan cheese. Form into tiny bite size balls. Drop the balls into broth. When they rise to the top, they are cooked.

Step 2

Add spinach to broth. In a separate bowl, combine the remaining 3 eggs with the remaining 1 cup of parmesan. Pour this mixture into the soup, stirring constantly, until the egg is cooked
