Ingredients
- 3 tbsp olive oil Oil, olive, salad or cooking
- 1 large onion cut into eighths
- 2 cloves garlic, minced Garlic, raw
- 1 lb boneless, chicken breasts, julienne Chicken, broilers or fryers, breast, meat only, raw
- 1½ 6 oz jar marinated artichoke hearts, undrained
- 7 jar roasted red pepper, undrained
- ½ cup pitted black olives Olives, black
- salt and pepper Peppers, sweet, red, cooked, boiled, drained, with salt
- 3/4 lb tricolour fusilli, freshly cooked
- could add some sundried tomatoes
Method
Step 1
Heat oil in heavy skillet. Add onion and garlic. Cook until transparent, stirring occasionally for 10 minutes. Add chicken and stir until cooked though 8 minutes. Mix in artichokes, peppers and liquids and olives. heat though and check seasonings. Pour over pasta and toss well. Serve topped with cheese and a side salad
