Egg salad sandwiches are great for appetizers and sandwiches. We all have our standard recipes we use and probably a couple of variations on those. Curry has always been a great addition to give them a flavor punch in our household. In the recent issue of Bon Appetit magazine they had a recipe for horseradish deviled eggs that looks like a great twist on a standard deviled eggs recipe. If you are planning a lunch/brunch buffet this Mother’s day, those eggs might be worth trying. I think the bread crumb topping would bring a nice crunch. Don’t forget to include your regular version as well for those less adventurous.
Getting back to egg salad sandwiches the addition of horseradish into a recipe struck me with a why didn’t I think about that before. We add mustard which brings a vinegar tang so why not horseradish that clearly has some kick of its own. Into the kitchen we went to boil some eggs and determine how to add the horseradish into an egg salad recipe. The results were a great tangy flavor with a hint of the dill and parsley herbs we added. Both the mustard and horseradish add tang so if vinegar is not your thing then you might want to drain/rinse the horseradish or add a dry mustard water mixture in lieu of the Dijon mustard. We tried it and we liked it. Here is our recipe for the horseradish egg salad sandwiches.
Horseradish Egg Salad Sandwich – RECIPE
Ingredients
- 12 hard-boiled large eggs, peeled, halved
- 1/2 cup mayonnaise
- 2 tablespoons prepared horseradish
- 2 teaspoons Dijon mustard
- pinch of salt
- 2 tablespoons chopped dill
- 1 tablespoon chopped italian parsley
- Slices of bread of your choice
Method
Step 1
Scoop the yolk out of each egg and place in a medium size bowl. Set aside the egg whites. Mash egg yolks. Add the next 3 ingredients and combine until well blended.
Step 2
Mash or dice the egg whites in a separate bowl until the size is generally uniform. Add to the other mixture with remaining ingredients and combine.
Step 3
You can serve right away or allow it to chill for some flavor enhancement. Serve on your favorite bread. For appetizers, remove crust and cut each sandwich into quarters. Add some fresh lettuce from you garden for some additional flavor and crunch.
Prep time does not include time for boiled eggs. Make them the night before if you want to have stronger flavors.
