Ham Mousse Three meals a day

This recipe serves 6
Ingredients
- 1 Tbs gelatine
- 1/4 cup cold water Water, municipal
- 1/2 cup chicken stock Soup, chicken broth, canned, prepared with equal volume water, commercial
- 2 cups minced ham Turkey ham, cured turkey thigh meat
- few grains cayenne
- 1 tsp dry mustard Spices, mustard dry
- 2 Tbs grated onion Onions, raw
- 2 Tbs green pepper, finely chopped Peppers, sweet, green, raw
- 2 Tbs parsley, finely chopped Parsley, raw
- 2 Tbs lemon juice Lemon juice, raw
- 1/2 cup heavy cream, whipped
Method
Step 1
Soak gelatine in cold water. Add chicken stock and stir until gelatine is dissolved. Chill. When partially set, add remaining ingredients.
Step 2
Turn into shallow pan 10X10. Chill. Cut in squares.
Step 3
Serve on lettuce, garnish with horseradish and Red Crested Aspic
