Grilled Lamb Chops


This marinade is wonderful on the chops but I would be great on a butterflied leg, or tender loins.  This recipe serves 4


  • 3 medium cloves garlic, minced
  • 3 tbsp fresh rosemary, chopped Rosemary, fresh
  • 1/3 cup chopped parsley ( about 1/2 a bundle)
  • 2 tbsp dijon mustard Mustard, Dijon
  • 1/3 cup olive oil Oil, olive, salad or cooking
  • ½ tsp pepper Spices, pepper, black
  • 2 racks lamb, each cut into 6 chops
  • 1 lemon, squeezed for juice Lemon juice, raw
  • coarse salt Salt, table


Step 1

Combine garlic, rosemary,parsley, dijon mustard olive oil and pepper to gether in amedium mixing bowl and then smear on the chops. Cover and let marinate for at least one hour. Just before grilling, season lamb generously with sea salt. Grill on high heat 2-3 minutes on each side including fat side. Squeeze lemon juice over chops while cooking. Remove from heat and let rest
