Greek Potatoes

Ingredients
- 10 large red new potatoes, cut in wedges
- 1 cup water Water, municipal
- 1/3 cup fresh lemon juice ( I use more, about 1/2 cup) Lemon juice, raw
- 1/4 cup olive oil Oil, olive, salad or cooking
- 3-4 large cloves of garlic minced Garlic, raw
- 2 tsp oregano Spices, oregano, ground
- 1 tsp black pepper Spices, pepper, black
- 1/2 tsp salt Salt, table
Method
Step 1
Mix the water, juice, oil,garlic oregano, pepper, and salt in a bowl. Place potatoes in an oblong pan, large enough to hold most of them in a single layer. Pour liquid mixture over the potatoes and toss to coat. Roast 2 hours at 325F tossing occasionally. If a crunchier potato is desired, cook longer up to about 30 mins.
