Gravlax On Dill Pikelets

Pikelet is a type of pancake in Australia and New Zealand Add the Dill to serve with the gravlax a type of smoked salmon
Ingredients
- 1/2 cup self-rising flour
- 1 egg yolk
- 1/2 cup milk
- 1 1/2 Tbs chopped fresh dill
- 80 g sliced gravlax, chopped
- fresh dill sprigs, chopped
- 2/3 cup mascarpone cheese
- 2 tsp seeded mustard
Method
Step 1
Sift flour into bowl, gradually whisk in combined egg yolk, milk and dill. Whisk until smooth. Drop teaspoon of mixture into heated greased heavy-based pan and cook until bubbles appear. Turn PIKELETS. brown on other side; cool on wire rack.
Step 2
Topping: Combine cheese and mustard in a bowl and mix well Spoon topping into piping bag fitted with 7mm plain tube. Pipe topping onto PIKELETS, top with gravlax and extra dill
