So how do you make pita bread? The answer is that it is really not that hard at all. I have never attempted it before and now I think I will avoid, wherever possible, accepting dry store bought pitas. These golden flat bread pitas are measurably better in so many ways. This recipe is from our friends at King Arthur Flour and were made with their excellent ingredients.
The recipe does include a dough improver that if you are a King Arthur regular you might be familiar with. But if you don’t have it, I made my first batch without it and it works fine. However, I can say that with my experience with pizza dough and similar flat breads is that anything that can help the dough from pulling back is welcome. This recipe is no different, but a 6 inch disc is more manageable than a 12 inch or larger pizza.
This pita bread recipe is the only one we have ever tired, but it gets five stars. Everyone loved the texture and freshness of the pitas. If you have never thought about baking your own pita bread, think again because making it is a very simple effort. There is nothing more welcoming to guests or family entering your house than the smell of freshly baked bread. So go ahead and make your first pitas.
Ingredients
- 3 cups all purpose flour
- 2 teaspoons instant yeast
- 2 teaspoons King Arthur Easy Roll Dough Improver (optional)
- 2 teaspoons sugar
- 1 1/2 teaspoons salt
- 1 cup water
- 2 tablespoons vegetable oil
Method
Step 1
Combine all the ingredients into a rough dough in your stand mixer bowl. Knead the dough by hand for 10 minutes or in the mixer for 5 minutes until you have a smooth ball.
Step 2
Place the dough into a lightly greased bowl and allow to rest/rise for an hour. It may not double.
Step 3
Turn the dough out onto a lightly oiled surface and divide into 8 rounded pieces and cover. Take two out at a time and roll into 6 inch circles and place on a lightly greased baking sheet. Continue process for all and preheat your oven to 500º. Allow dough to rest for 15 minutes..
Step 4
Place your first sheet on the lowest rack in the oven and bake for 5 minutes. They should puff up (if not check your temperature). Transfer the sheet to the middle to top rack and bake for another 2 minutes until browned.
Step 5
Remove and wrap in a clean dish towel. Repeat with the second tray. Once cool, store pitas in an airtight container if not serving immediately.
