South Beach Diet ( Phase One)  This recipe serves 5

Ingredients

  • 2 1/2 cups Tomato or Vegetable juice Tomato and vegetable juice, low sodium
  • 1 cup fresh tomatoes, peeled,seeded & finely chopped Tomatoes, red, ripe, raw, year round average
  • 1/2 cup celery, finely chopped Celery, raw
  • 1/2 cup cucumber, finely chopped Cucumber, peeled, raw
  • 1/2 cup green bell pepper, finely chopped Peppers, sweet, green, raw
  • 1/2 cup green onion, finely chopped Onions, green, spring or scallions (includes tops and bulb), raw
  • 3 Tbs white wine vinegar Vinegar, white wine
  • 2 Tbs olive oil Oil, olive, salad or cooking
  • 1 large clove garlic, minced Garlic, raw
  • 2 tsp flat leaf parsley, finely chopped
  • 1/2 tsp salt Salt, table
  • 1/2 tsp worstershire sauce
  • 1/2 tsp black pepper, freshly ground Spices, pepper, black

Method

Step 1

Combine the juice, tomatoes,celery cucumber,bell pepper,onion,vinegar,oil,garlic,parsley,salt and pepper in a large glass bowl or stainless steel bowl. Cover and refrigerate overnight.

Step 2

Serve cold
